Future Sushi
This work embodies new sushi based on possible situations of the future and deals with topics such as pollution of ocean resources, the development of cultured fish meat, and the changing future of the human body and many more.
The future of food and changes in the fundamental business of eating are the underlying issues of her work. The idea was born in 2020, during the pandemic, as the artist, who is used to travel a lot, started to miss this way of living. As a substitutional act she went to a 100-Yen shop and bought plastic cups and trays and prepared her own economy class food (as it is usually provided on planes) while watching videos of airport staff explaining the on-board safety measures and looking at a photo of the sky, displayed on her tablet. Connecting eating, movement and technology, she started to entertain the idea of a so-called sushi train, that shows different points in time, spanning from 2030 to 2110. The 18 different types of sushi include scenarios and ideas like lab-grown meat and fish, sushi that allows you to install a second set of digestive organs or the 2060 second-class citizien sushi. Meanwhile, Master Pepper the robot chef offers entertaining anecdotes and prepares the sushi. Etsuko consulted scientist for her Future Sushi and sees her creations as half fantasy, half evidence.
Created in 2022, the work consists of food samples, tableware, conveyor, electronic parts, humanoid robot, 3D-printed material, acrylics, wood, and others in variable dimensions.
